We are currently featuring the fantastic cheeses from the Farm At Doe Run. A local farm with a philosophy of simple sustainable farming to produce the highest quality cheese and micro greens. Practicing a 5,000-year-old craft, Doe Run carefully transforms small vats of farm-fresh milk into award winning cheeses, that are not only food but works of art. The cheeses are produced seasonally and crafted in small batches with limited supply. Due to the limited production we often don’t really know week to week what will be coming from the farm which brings much anticipation and excitement on delivery day; the true farm to table experience.

We are even more excited for this Saturday May 2nd to host the actual cheesemakers at our Meet the Cheesemaker Event. Join us at our West Chester location from 11-2 as we sample out these awesome Doe Run cheeses and talk shop. In the meantime allow us to introduce you to The Farm at Doe Run…

The farm is located right in our own backyard in the scenic Chester County, PA. Doe Run uses sustainable grazing techniques on their 350 acres to provide the best possible nutrition and health for their animals whom in turn provide them with the highest quality milk possible. Once the milk enters the cheese making facility the two cheesemakers, Samuel Kennedy and Matt Hettlinger craft small batches of the seasonal cheese. The cheeses are aged in their own temperature and humidity controlled caves built from locally quarried stone, giving each cheese its own climate zone to allow ideal ripening.

Hummingbird
A fresh bloomy rind pasteurized cow’s milk cheese with a flavor range from citrusy in it’s early days to a delectable dollop of cream as it ages. (for the record we love it at any stage) These sweet little ovals of bliss weigh in at 4 ounces each and are light and delicate just like their namesake.

 

Bathed in Victory
Two local gems Doe Run Cheeses + Victory Brewing Company come together to make fromage magic. The pasteurized cow’s milk cheese with a semi-soft paste washed in Victory beers takes on notes of fresh hops, yeast, dry hops and fruit. We are currently carrying Bathed in Golden Monkey & Storm King however be warned we have limited supply as this cheese sells out quickly!

St. Malachi
Doe Run’s Alpine style cheese with a more than favorable flavor profile of toffee and roasted nuts with a touch of pineapple. The paste of the cheese is smooth yet firm, younger wheels have a smooth bitable texture similar to that of a Gruyere.

Barn Owl
The most recent addition to our Doe Run collection, Barn Owl is a soft washed-rind cheese with a pungent, earthy and complex rind. This is balanced out by a creamy paste with an unexpected sweet note once fully ripened. Think adventure, France, grass, green olives and butter.

 

Dragonfly
A pasteurized French-style soft cow’s milk cheese with a flaky, creamy paste that melts in your mouth. This textured beauty is molded in a log about 2-3 pounds each, and is so impressive it won second place as a farmstead soft cheese at the 2014 American Cheese Society’s Conference.
