The world of cheese embraces the idea of the Red, White, and Blue. The Red is obvious with cheeses like English Red Windsor and Red Leicester, but the Red is also present in the wonderful Italian cheese Pecorino Rustico Red Pepper. This sheep’s milk cheese has a semi-soft consistency, typical of cheeses hailing from the Roman countryside; its paste is dotted with flakes of Italian red pepper. The resultant flavor combines the intensity of the sheep with the tang and heat of the pepper… with one underlining the other.

Cheese aficionados have always loved the Blues… and they’re quite happy to say so. Our most recent favorite and Italy’s best known Blue is Gorgonzola Piccante or also referred to as the Mountain Gorgonzola. Gorgonzola Dolce, Piccante and Tallegio are known as the stracchino “tired” cheeses, since they are made from the milk of the “tired” cows. You may be asking yourself, ‘Why are the cows tired?’ Well, the answer is because the cows have made the long journey from the high mountain pastures to the lower grazing areas. The complexity of the silage that they eat on the way down translates into complex milk thus creating a complex cheese. Available in both Dolce “sweet, tender” and Piccante “sharp” types, perfect for a Tartinade (see recipe below) with Gorgonzola Piccante, Pear and Walnut. Last, but certainly not least is the White, one of cheese’s favorite colors. It is evident in white Goat cheeses and the bloomy white soft ripened ones. We also feature wonderful white Mozzarella. This pure white pasta filata is available at Carlino’s in both the Water Buffalo and the Cow’s milk varieties. The Water Buffalo variety is from the Campania region of Italy and is offered in 7 oz. balls. It has a higher fat content and a mossy, feral nose. Carlino’s cow mozzarella is offered in various sizes: the small, salad perfect, ciliegine, the slice-able quarter pound Ovaline, and the ever popular one pound Handmade Mozzarella balls. Since fresh produce was so scarce at the time, the traditional cucumber, bread & butter sandwiches were substituted with pickles, bread & butter. Recipe

For a quick and easy plate to bring to a Fourth of July Picnic!

Tartinade with Gorgonzola Piccante, Apricot and Walnut
Recipe

Ingredients:
3.5 oz of Gorgonzola Piccante
Carlino’s Artisan Long Semolina Loaf
Carlino’s Meyer Lemon Infused Olive Oil
3 Tbs of crème fraiche
1 ripe Apricot
9 walnuts

Preparation:
Roughly mix the Gorgonzola Piccante and the crème fraiche with a fork (no need to get a perfectly homogeneous mix). Add the walnuts by crushing them with your fingers above the mix Gorgonzola Piccante/crème fraiche. Peel the apricot, cut into slices and grill. Cube the apricot after grilling and add it gently to the mix. Spread the mix on a slice of slightly toasted semolina bread. Spritz on some Carlino’s Meyer Lemon Infused Olive Oil.
