While you’re making your shopping list for the week, add all Carlino’s ingredients to make this simple and delicious Shrimp Scampi. A D.I.Y. Dinner in honor of National Shrimp Scampi Day.
Ingredients:
- 1 lb of frozen shrimp
- 1 red onion
- 1-2 bulbs of garlic
- 1 lb of Carlino’s linguini pasta
- Salt
- Pepper
- Red pepper Flakes (Optional for some heat!)
- Carlino’s Extra Virgin Olive Oil
- Salted butter
- Lemon for juicing
- Fresh parsley
- White wine is encouraged but not necessary
Cooking Instructions:
- Rinse shrimp and let thaw in colander if frozen
- Peel and dice red onion
- Bunch and chop 1/4 cup of fresh parsley
- Mince 2-3 cloves of garlic
- Boil a large pot of water on high heat, add pinch of salt for flavor
- At boil, reduce to low heat and add fresh pasta
- Stir linguini occasionally until al dente
- While pasta cooks, heat a large skillet and melt 2 tablespoons of butter followed by 2 tablespoons of olive oil
- Add chopped red onion and minced garlic
- Stir continuously until garlic is golden brown
- Add 1 lb of shrimp, season with salt and pepper
- Stir into buttery mixture
- Add a pinch of parsley and reduce heat while your prepare linguini
- Carefully strain noodles from boiling waters and drain in colander
- In separate skillet, heat on high and add white wine, if desired, and 1/4 cup of lemon juice, 2 tablespoons of butter and 1/4 cup of fresh parsley
- Add strain linguini and carefully toss for 1 minute in wine and butter mix
- Remove linguini from heat and check to see if shrimp is finished
- Plate shrimp over linguini, garnish with parsley and lemon
