& when it comes to cheese – cheese loves the air. It is the air and the specific micro organisms in it that help determine the distinct nature of each cheese, making it virtually impossible to duplicate a cheese anywhere else than its country of origin.
Love and cheese belong together in a variety of ways. The lush indulgence of double and triple crèmes, the intimacy of a fondue moment and the eternal love of Italians for cheese all attest to that.

At Carlino’s February is Fondue month. Look for great fondue cheeses including: French Gruyere, Swiss & French Emmenthaler, Appenzeller and Austrian Moosbacher. Add some Asturian Pitu to your fondue for a spicy twist!
In Europe, Fondue is known as the “great body warmer.” The popularity of fondue in Europe is well known and fondue rituals have developed…if your bread falls off your fork and into the fondue pot and you are a woman, you must kiss the person to your left…if you are a man, you must go and buy a bottle of wine. College students in Sweden, who lose their bread in the pot, strip and jump naked into the snow. You would need a lot of the “great body warmer” after that!

Carlino’s Handmade Breadsticks & Flatbreads

These breadsticks and flatbreads go with just about everything. The hand formed breadsticks are the perfect accompaniment for Carlino’s Parmigiano Dipping Sauce and they are a tasty tool for any of Carlino’s many dips and spreads.

Carlino’s flatbreads are flaky and flavorful. Try them with our homemade bruschetta or with one of our tapenades. Flatbreads are a chi-chi offering with pasta dishes and are loved by triple crème cheeses.
Recipe: Fondue / Fonduta – February is Fondue Month!
Carlino’s Italian Fonduta

Ingredients:
8 oz. Italian Fontina
8 oz. Asiago Fresco
8 oz. Alta Badia
14 oz. Milk
3.5 Tbsp. Butter
7 Egg Yolks
Sliced Mushrooms
Salt and White Pepper
Slices of Toasted Bread
Directions:
- Cut the cheese into thin slices and marinate in the milk for at least 4 hours.
- Put the butter in the fondue pot.
- Slowly add the cheese and 5 Tbsp. of the milk that they were marinated in.
- Melt the cheese, stirring continuously until it can be pulled out in strings.
- Whisk the egg yolks with the remaining milk and stir in quickly to give a smooth, thick cream.
- Season with salt and white pepper.
Divide the fonduta into small bowls, sprinkle with thin sliced mushrooms and serve with slices of toast.
