Therefore, we here at Carlino’s have chosen to feature cheeses with spirit(s)… those great cheeses of the world that are infused with wine, whisky or beer. The combination of cheese and spirits is as old as time and especially supported by the Trappist monks of the Middle Ages. Our selection must then start with…
Chimay Ala Biere: “Chimay with Beer” is a semi-hard mild Belgium cow’s milk cheese that’s rind is bathed with Chimay beer in order to impart the beverage’s aroma and flavor (distinctly hoppy) to the cheese.
Cahill with Porter: This unique Irish Cheddar has a creamy center that is marbelized with dark brown Guinness.

Our selected “wined” cheeses are:
Ubriacone: This Italian cow cheese is seasoned with sweet Fragolino wine which gives it a unique sharpness and a wine-like taste and aroma.
Bellavitano Merlot: This Bellavitano is soaked in merlot to give it extra tang and full merlot flavor.
Carpenedo Blu: The aromatic and intense notes typical of the Italian cow’s milk blue cheese are wrapped by the scents of marasca cherry and fruit of the Passito di Raboso wine.
Drunken Goat: Aged for approximately 75 days, this semi-soft Spanish goat cheese is soaked in wine made from the Monastrel grape.
And when it comes to whiskey, one of the “hic-ious” is Irish Whiskey Cheeses.

Larosa Sauce Goes With…Pasta

Keeping in the “spirit” of Halloween, our featured sauce of the month is our Homemade LaRosa Sauce. This excellent sauce is perfect with a variety of Carlino’s pastas, especially the cheese tortellini made with Ricotta, Locatelli and Mozzarella cheeses. As the Carlino’s do at home, serve the LaRosa Sauce with lump Lobster Ravioli, for a spirited dinner that friends and family (and ghouls and boys) will be sure to remember.
Spirited Salami With Wine

Salumi is the Italian word for salted and cured meats. It is typically pork but any meat that is cured or preserved could be considered a type of salumi. On the other hand, salami are dry cured sausages, pepperoni being the most recognizable. Here at Carlino’s we offer a variety of salami, and for October are featuring the ones infused with “spirits.”
DiLusso Genoa Salame: Made from pork and beef which is flavored with crisp white-wine, hand cut and packaged for you on premise. This goes well with the mild taste of provolone cheese.
Prosecco, Volpi Rose, Pinto Grigio, and Chianti salami: All-natural and handmade with love “and a little wine.”
Olli’s Norcino, Molisana and Calabrese salami: Enchanted with Sangiovese wine in a variety of flavors such as spicy, garlic, and sweet.
Let us not forget, Bussetto Dry Salami con Vino: The red wine brings out the best in this salami. Pair it with your favorite cheese and it becomes “ghostly” good.
Spirited Chef’s Kitchen Offerings

Chicken Marsala is an Italian classic made from chicken cutlets, mushrooms and Marsala wine. Marsala is produced in the Sicilian city of Marsala. It is a white wine made from Grillo, Inzolia, and Catarrato grapes.
Vegetable Lasagna is a great dish for veggie lovers! Broccoli, zucchini, mushrooms, and carrots between fresh pasta sheets and smothered in our La Rosa Sauce.

Carlino’s Pancakes & Lancaster County Bacon
We now feature our own line of simply delicious pancake mixes. They include:

Nothing says breakfast like a stack of yummy pancakes right off the griddle. Serve with our pure maple syrup and our locally sourced bacon, straight from Lancaster County, hand cut on the premises. And you’ll have a breakfast that’ll even bring zombies back from the dead.
Recipe
Welsh Rarebit

Ingredients:

2 T butter
1 lb. 3 year old Quebec Cheddar
½ t salt
1 t dry mustard
Cayenne pepper to taste
1 cup beer or ale
2 egg yolks (lightly beaten)
1 t Worcestershire sauce
Instructions:
1. In a heavy saucepan melt butter. Add cheese, salt, mustard and cayenne pepper. Stir until cheese starts to melt.
2. Stir while gradually adding beer or ale.
3. When blended, remove from heat and stir in egg yolks (vigorously). Heat gently until mixture begins to thicken. Don’t overcook!
4. Stir in Worcestershire sauce.
5. Serve hot over toast, roasted tomatoes, asparagus, ham or bacon, or whatever you like.
6. Enjoy!
