This is a hard sheep cheese from the Pyrenees, and, if you have a passion for “hot,” drizzle it with Carlino’s Pepperoncini Extra Virgin Olive Oil. This French Basque cheese is pasteurized. It is firm, dense yet creamy. Its flavor is rich, buttery, nutty and fruity with undertones of Pimento.

Lemon Dill Mustard: Classic Dijon mustard is given a bright dimension with the addition of California fresh lemon juice and zest, as well as fragrant dill. Use in place of tartar sauce on your favorite fish. Add to Carlino’s Extra Virgin Olive Oil and Carlino’s Balsamic for a salad dressing fit for a gourmand.
**Match with Bellavitano- which has full citrus notes due to the fact that the cows graze on lemon grass. This makes Bellavitano the perfect match for our own Lemon Dill Mustard.

Recipe

For the King of the family (for a day at least) we offer this recipe for Beet, Orange and Parmigiano Reggiano (the King of all cheeses)
Recipe
Beet, Orange and Parmigiano-Reggiano Salad
1 pound Carlino’s pickled beets
3 oranges, peeled and sliced
1/3 cup walnuts
3 tablespoons orange juice
1 teaspoon lemon juice
¼ teaspoon salt
3 tablespoons Carlino’s extra-virgin olive oil
2 ounces PARMIGIANO-REGGIANO
Freshly ground pepper

Yield: 6 portions
Directions:
Arrange beets and orange slices in an attractive overlapping pattern on a large serving platter or on individual plates. Toast walnuts in a pre-heated 350 degree F oven until light golden brown, about 10 minutes. Chop finely and sprinkle over beets and oranges.
Whisk together orange juice, lemon juice and salt. Make ½ cup of thin slivers of Parmigiano-Reggiano with a vegetable peeler. Scatter over the salad. Season with pepper and serve immediately.

All of the above ingredients are available at Carlino’s Markets.

How we prepare our Pickled Beets:
We steam our beets to perfection and then hand slice and add white onions, parsley, salt and pepper, Carlino’s Extra Virgin Olive Oil and Carlino’s white balsamic.

But please warn Mom… Beets are considered an aphrodisiac!
