{"id":3871,"date":"2021-04-09T15:08:57","date_gmt":"2021-04-09T19:08:57","guid":{"rendered":"http:\/\/carlinosmarket.com\/blog\/?p=3871"},"modified":"2021-04-09T15:08:58","modified_gmt":"2021-04-09T19:08:58","slug":"a-tisket-a-tasket-ricotta-in-your-basket","status":"publish","type":"post","link":"https:\/\/carlinosmarket.com\/blog\/a-tisket-a-tasket-ricotta-in-your-basket\/","title":{"rendered":"A Tisket, a Tasket, Ricotta in Your Basket"},"content":{"rendered":"\n<p>When I was a kid I knew\nwhat ricotta was\u2026the cottage-cheese-like stuff that was in ravioli and\nlasagna.&nbsp; Yep, I was much better at\neating than cooking when I was younger. &nbsp;I\u2019m\na bit more balanced now.&nbsp; Not being\nItalian, I didn\u2019t recognize the diversity of ricotta until I joined Carlino\u2019s.&nbsp; First, a customer asked if what we sold was\nimpastata.&nbsp; I had no idea, but checked\nand sure enough, that\u2019s exactly what it was.&nbsp;\nThen we got ricotta salata for in the cheese case.&nbsp; Other than being white, it certainly didn\u2019t\nlook like any ricotta I had seen before.&nbsp;\nEventually Easter arrived and I learned about hand-dipped ricotta and\nbasket cheese.&nbsp; And most recently a\ncustomer requested ricotta pecorina.&nbsp;\nSeriously?&nbsp; Who knew ricotta was\nsuch magical mild-mannered cheese with so much variety?&nbsp; <\/p>\n\n\n\n<p>Here is a rundown of the\nvarieties, from softest to hardest:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Hand-dipped \u2013 Delicately rich flavor with a soft creamy texture,\nthis version is lighter and can be used in traditional pasta dishes.&nbsp; It\u2019s great with fruit or in lemon ricotta\npancakes for breakfast, on top of toast or crackers, or baked into cheesecakes\nand cookies.&nbsp; <\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>Impastata \u2013 Naturally drained of excess moisture, this cheese is\ndrier and smoother. It\u2019s great used for cannoli filling, ricotta cheesecake or\nravioli filling.&nbsp; You can make your own\nby pressing and straining traditional ricotta, but it seems easier to buy it at\nCarlino\u2019s. <\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>Basket Cheese \u2013 Sliced and drizzled with olive oil and balsamic\nvinegar, this is an Easter brunch tradition at the Carlino\u2019s house.&nbsp; Not technically ricotta, basket cheese is\nsimilar and almost like a blend of fresh mozzarella and ricotta.&nbsp; A little on the mild side, it\u2019s good on\ncrackers or homemade Italian bread with honey or jam, in frittatas, or on\npizza.&nbsp; It\u2019s also delicious baked into a\ntraditional Easter meat pie, such as the homemade one made and sold at the both\nArdmore and West Chester locations.&nbsp;&nbsp; &nbsp;<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>Salata \u2013 Salata, meaning salted, is pressed and aged, making it\nmuch drier.&nbsp; It\u2019s a good substitute for\nfeta if you prefer something less tangy.&nbsp;\n(Try it in the tomato and feta bake recipe that\u2019s sweeping the internet.)&nbsp; Sharper and more crumbly, this version is also\ngreat for snacking, in salads, or even grated.<\/li><\/ul>\n\n\n\n<ul class=\"wp-block-list\"><li>Pecorina \u2013 This is a sheep\u2019s milk version that tastes like a\nsaltier pecorino romano.&nbsp; The pre-packed\nversion we sell in the store is even shaped in a cone making it the perfect\nshape for grating.&nbsp; It\u2019s a delicious\nalternative on top on pasta dishes in place of Parmigiano-Reggiano or\npecorino.&nbsp; <\/li><\/ul>\n\n\n\n<p>Of course, whichever\nvariety you prefer for whatever use is completely up to you.&nbsp; I\u2019m always interested in hearing from\ncustomers about their cheese habits, so stop by my counter in West Chester and\nwe can discuss ricotta (or any other cheese!) and find the perfect one for your\nneeds.&nbsp; <\/p>\n","protected":false},"excerpt":{"rendered":"<p>When I was a kid I knew what ricotta was\u2026the cottage-cheese-like stuff that was in ravioli and lasagna.&nbsp; Yep, I was much better at eating than cooking when I was younger. &nbsp;I\u2019m a bit more balanced now.&nbsp; Not being Italian, I didn\u2019t recognize the diversity of ricotta until I joined Carlino\u2019s.&nbsp; First, a customer asked&#8230;<\/p>\n","protected":false},"author":5,"featured_media":3872,"comment_status":"open","ping_status":"open","sticky":false,"template":"","format":"standard","meta":{"_acf_changed":false,"footnotes":""},"categories":[1],"tags":[],"class_list":["post-3871","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-specialty-foods-catering"],"acf":[],"yoast_head":"<!-- This site is optimized with the Yoast SEO plugin v24.8.1 -
