June is named after Juno, the goddess who was the patroness of marriage, and dating back to ancient Rome it was considered to be the most favorable time to marry. Juno was also the patron goddess of Rome and the Roman Empire where she was called Regina (Queen).<\/p>\n<p>In light of the Roman connection, we have chosen Cacio di Roma (Cheese of Rome) as our Cheese of the Month. Cacio di Roma is produced in the Roman countryside. It is a pasteurized sheep\u2019s milk cheese with a semi-soft consistency. The process used in making Cacio di Roma includes inoculation of the milk with lamb\u2019s rennet, two millings of the curds\u2026the first to walnut sized and the second to smaller pieces\u2026and the ripening of the curd in the whey. The result of the total process is a creamy paste that imparts a distinct yet delicate taste. The semi-soft consistency makes it a perfect melting cheese.
