Feature cheeses of one country or a specific region: for example, the Venuto region of Italy which could include Asiago (Fresco or Aged), Grana Padano, Piave, Trugole, Robiola and Ubriacone (all part of Carlino\u2019s cheese menu). Or have the cheese board follow the wine selection. High acid wines work well with full fat cheeses (double and triple cr\u00e8mes); champagne works well with semi soft cheeses (like Morbier) because the cheese leaves a residue of creaminess of the throat that provides the champagne bubbles with a place to land.<\/p>\n<p>Offer three to five cheeses in a pre-dinner gathering; provide each guest with at least one ounce and up to four ounces of each cheese depending upon what is to follow. This Spanish cheese is rich and buttery and finishes with perfect balance.<br \/>\n<\/br><br \/>\n<strong>Stilton with Blueberries:<\/strong> Stilton Cheddar is paired perfectly with Blueberry and many other fruits because of its unique aroma and flavor. Known as the \u201cKing of English Cheese\u201d, Stilton has a cream-colored interior with blue-green texture &amp; a delicate balance of flavor &amp; aroma. It makes for an excellent dessert cheese and goes well with Port or red wines.<br \/>\n<\/br><\/p>\n<h3>Entertaining Goes With Party Trays<\/h3>\n<p>Rosh Hashanah, or \u201chead of the year,\u201d refers to the Jewish New Year. It is one of the holiest days on the Jewish calendar. Much like the American New Year, it is about making resolutions. There are many food related traditions with this holiday. Dipping apples in honey represents a sweet New Year. One can also dip bread in honey. Some head to a flowing body of water and cast small pieces of bread into the water symbolizing the casting off of sins. Commonly, no work is permitted on this holy day. Check out our Rosh Hashanah Menu today and let us help you celebrate.<\/p>\n<p>Click <a title=\"Rosh Hashanah Menu\" href=\"http:\/\/www.carlinosmarket.com\/entertaining\/rosh-hashanah\" target=\"_blank\">HERE<\/a> to visit our Rosh Hashanah Menu.<br \/>\n<\/br><\/p>\n<h3>Recipe<\/h3>\n<p>Gruy\u00e9re Croquettes<\/p>\n<p>Yield: 4 Servings<\/p>\n<p>Ingredients:<br \/>\n2 tablespoons<br \/>\n4 \u00bd teaspoons flour<br \/>\n1 cup milk, 2 egg yolks<br \/>\n\u00bd cup grated Gruy\u00e8re<br \/>\n2 tablespoons grated Pecorino Romano<br \/>\nA pinch of nutmeg, salt if needed<br \/>\nA sprig of thyme<br \/>\nFlour, 1 egg (beaten)<br \/>\n3 cups bread crumbs, oil for frying<\/p>\n<p>Preparation:<br \/>\nMelt the butter in a sauce pan, add the flour, and stir until smooth, taking care not to let it color.<br \/>\nPour in the milk, stir until smooth, and cook for 20 minutes, stirring constantly so that this b\u00e9chamel does not stick.<br \/>\nRemove the pot from the heat, let it cool some and stir the yolks into the sauce one at a time.<br \/>\nBring to a boil and pass through a fine strainer.<br \/>\nAdd the Gruy\u00e8re and Pecorino, the nutmeg, the salt (if needed), and the thyme leaves (stripped from their stalks.)<br \/>\nSpread the mixture onto a piece of buttered foil, making 5&#215;6 inch rectangle.<br \/>\nCover with foil and cool 1-1\u00bd hours.<br \/>\nNow cut the Rectangle lengthwise into three equal pieces and crosswise into strips about \u00bd inch wide.<br \/>\nDip the croquettes in the egg and coat twice in bread crumbs.<br \/>\nHeat the oil to 360\u00b0 F. Deep fry for 2-3 minutes.
