The Red is obvious with cheeses like English Red Windsor and Red Leicester, but the Red is also present in the wonderful Italian cheese <strong>Pecorino Rustico Red Pepper<\/strong>. This sheep\u2019s milk cheese has a semi-soft consistency, typical of cheeses hailing from the Roman countryside; its paste is dotted with flakes of Italian red pepper. The resultant flavor combines the intensity of the sheep with the tang and heat of the pepper&#8230; with one underlining the other.<\/p>\n<p>\tCheese aficionados have always loved the Blues\u2026 and they\u2019re quite happy to say so. Our most recent favorite and Italy\u2019s best known Blue is <strong>Gorgonzola Piccante<\/strong> or also referred to as the Mountain Gorgonzola. Gorgonzola Dolce, Piccante and Tallegio are known as the stracchino \u201ctired\u201d cheeses, since they are made from the milk of the \u201ctired\u201d cows. You may be asking yourself, \u2018Why are the cows tired?\u2019 Well, the answer is because the cows have made the long journey from the high mountain pastures to the lower grazing areas. The complexity of the silage that they eat on the way down translates into complex milk thus creating a complex cheese. Available in both Dolce \u201csweet, tender\u201d and Piccante \u201csharp\u201d types, perfect for a <strong><em>Tartinade<\/em><\/strong> (see recipe below) with Gorgonzola Piccante, Pear and Walnut. This versatile blue is our July Cheese Club, Cheese of the Month. It is evident in white Goat cheeses and the bloomy white soft ripened ones. We also feature wonderful white <strong>Mozzarella<\/strong>. This pure white pasta filata is available at Carlino\u2019s in both the Water Buffalo and the Cow\u2019s milk varieties. The Water Buffalo variety is from the Campania region of Italy and is offered in 7 oz. balls. It has a higher fat content and a mossy, feral nose. Add the walnuts by crushing them with your fingers above the mix Gorgonzola Piccante\/cr\u00e8me fraiche. Peel the apricot, cut into slices and grill. Cube the apricot after grilling and add it gently to the mix. Spread the mix on a slice of slightly toasted semolina bread.
