Linguine Mare and Monti
Serves Approximately 4
Ingredients:
- ½ cup Carlino's Own Extra Virgin Olive Oil
- 3 Garlic cloves, sliced
- 1 Onion, julienned
- 2 cups Mushrooms, sliced
- 1 lb. Seafood Medley, pre-mixed thawed
- 1 cup White Wine
- 2 cups Seafood Stock
- Pinch of Red Pepper Flakes
- ¼ cup Parsley, freshly chopped
- Salt and Pepper, to taster
- 2 Tbsp. Butter, dredged in flour
Directions:
Brown the garlic in olive oil over medium-high heat. Add onions and mushrooms and cook for 3 minutes. Add seafood medley and sauté for 2 minutes. Deglaze pan with white wine and reduce liquid by half. Add seafood stock and red pepper flakes. Bring to a quick boil and slowly whisk cold butter into sauce to thicken slightly. Add parsley and adjust seasoning. Toss with linguine.
