Escarole Salad with Red Wine Vinaigrette
Salad Mix
Ingredients:
- 2 heads Escarole, chopped and cleaned
- 2 Tomatoes, large dice
- 1 Red Onion, julienned
- 1 bunch Basil, fresh chopped
- 1 Cucumber, peeled and sliced
Directions:
Toss all ingredients together with vinaigrette (recipe follows).
Red Wine Vinaigrette:
Ingredients:
- 1 ½ cups Red Wine Vinegar
- 3 cups Carlino's Own Extra Virgin Olive Oil
- Salt
- Ground Black Pepper
Directions:
Pour red wine vinegar into a large mixing bowl. Slowly whisk in olive oil until emulsified. Season with salt and pepper.
