Cacio De Roma

June…spoon…honeymoon…all familiar rhymes with reference to the fact that June is the most chosen month for marriage. June is named after Juno, the goddess who was the patroness of marriage, and dating back to ancient Rome it was considered to be the most favorable time to marry. Juno was also the patron goddess of Rome and the Roman Empire where she was called Regina (Queen).

In light of the Roman connection, we have chosen Cacio di Roma (Cheese of Rome) as our Cheese of the Month. Cacio di Roma is produced in the Roman countryside. It is a pasteurized sheep’s milk cheese with a semi-soft consistency. The process used in making Cacio di Roma includes inoculation of the milk with lamb’s rennet, two millings of the curds…the first to walnut sized and the second to smaller pieces…and the ripening of the curd in the whey. The result of the total process is a creamy paste that imparts a distinct yet delicate taste. The semi-soft consistency makes it a perfect melting cheese. Try it the classic Roman way…place several slices of Cacio di Roma between two pieces of bread, dip the sandwich first in milk, then in egg and lastly, fry in butter that contains a bit of extra virgin olive oil.

Etorki

Aged for 3 to 6 months, Etorki is rich, with buttery notes, yet firm and supple with a burnt caramel sweetness and creamy texture.  This French cheese made from sheep’s milk is a perfect complement to apple slices, raw vegetables, olives and Black Currant Infused Balsamic Vinegar.





Just Arrived – Yellow Springs Goat Cheeses

This June, Carlino’s will be featuring three of the many goat cheeses from Yellow Springs Farm in Chester Springs, Pennsylvania:

Fieldstone  – Aged for 6 to 8 weeks in Yellow Spring’s cheese cave.  It has a semi-soft inside with an earthy and nutty taste. This cheese also pairs perfectly with any wine.







Nutcracker

Nutcracker –  Yellow Springs Farm’s Nutcracker cheese is an American Cheese Society 1st place award winner.  This semi-soft cheese is perfect with an after dinner drink.  Aged for up to 90 days, this cheese’s fruity taste comes from the walnut fermentation and mottled rind.







Cloud Nine

Cloud Nine – This French-style cheese is perfect served with Chocolate Infused Balsamic Vinegar.  It is considered a bloomy rind cheese, making it similar to Brie and Camembert.

Cheese Goes With Father’s Day

Recipe: Father’s Day Burgers with Goat Cheese

Burgers with Goat Cheese



Ingredients
2 lb. Carlino’s Certified Angus Ground Beef

3 tbs. finely chopped shallots

1 1/3 …your choice..crumbled goat cheese

¼ tsp. Cayenne pepper

Sea salt to taste



Directions:

Mix all ingredients together and form into 4 patties.  Cook as you prefer but always serve on a Carlino’s Homemade Hamburger Bun.
